I have a series of "job rows" on my resume, each with a fixed-height header (year, company, job title, etc.) and a variable-height body below. Can I have symbol instance resize to snuggly fit this multi-line text?

Not with Auto txt setting. You have to make text box larger than might need. Use the snap edge settings so when you drag a box it would show more txt from overrides

You can! Doable with Anima Stacks + Text boxes in "half-auto"-"half-fixed"-mode (by setting them to auto and then enter the desired width in pixels in the according field. You can see if your text box is in this mode when you can't adjust the vertical alignment anymore.)
I'm trying your trick now, but now the trouble is it doesn't seem to resize the symbol to hold this now-larger text box. So the text stays at its fixed width but grows vertically. Excellent. But the symbol it's a part of is still at the smaller height, so any Anima auto-layout magic below it is messed.

The problem with Stacks is that some elements are moved at "render time" by the plugin, that information is not actually stored in the Sketch file, so there's no way to for Zeplin to render it. For that purpose Anima has a "Prepare export to other plugins" which effectively duplicates the file and removes all symbols... Not the best thing though...
Try making txt largest size you might need and use Stacks. Some features of Anima don't render too well in Invision or Zeplin. Im getting mixed results even when exporting with Anima support
Making the text box too big to fit the content (unless it's maxed out) sorta ruins the point.
Huff. It's not the future yet.
