Hello, I am the lead designer Engineering in South Africa. We have a couple of seeing impaired clients and we are testing our software with Jaws. Is there anything from the community that can assist us in the testing of our accessibility when it comes to screen readers?

Unfortunately, accessibility testing for screen readers is really tough! It is heavily dependent on the OS, the browser/app environment, and the screen reader of choice. This makes testing quite complicated. It can get messy very quickly if you are trying to support all these options. That being said, hopefully the resources above are a decent place to get you started.
