Hi the smooth tool is now called "Subdivision surface" and can be found in the Objects Mode Toolbar. Select your object or multiple objects and apply the Subdivision surface modifier. The default level is 1, you can change this in the properties panel to 2 or 3 for a more smooth surface. Note that this is parametric and you can turn on and off the effect from the Objects List. All objects that are under the Sub-d tool get the effect applied. Simply drag and drop the items from the objects list into the modifier and they will get the effect applied as well.

Next question . Where I Can find merge tool for objects in new UI

Shortcut for merging of your selection is "X" (or right click on objects > merge) in object mode it will merge two objects into one mesh (with one material). As a parametric alternative use "boolean union" to merge multiple objects into one.

In object mode you do it with "boolean subtract" keep in mind the order of the objects in the objects list. In edit mode you cut selections (faces, lines) with the cut tool.

The mirror is now called symmetry and is available from the Generators tool bar in Object Mode. https://www.vectary.com/docs/generators/
