I watched the tutorials, but I didn't see the part where my specific question was addressed. I eventually figured it out by double-clicking the control handle I wanted to remove.

Double-clicking always removes two control handles and double-clicking again brings both symmetric handles back creating a smooth point. From there if you want to move on control handle independent from another (called CUSP points), start moving one handle and the same time tap and additional finger on the canvas to move independently from the other.
